First you will have to make sure that your scripts, add-ons, plugins or themes (if you have such) are compatible with newer PHP versions. The incompatibility might "break" your website, however you can always revert the change and start using older PHP version again.
The trend shows constant improvement in site performance from PHP version 5.6 to 8.0, however this is just slight upgrade and not that much noticeable. You have to aim to use PHP versions compatible with your applications and scripts.
